Inspired by the classic Mont-Blanc aux marrons, butter croissant soaked in vanilla sugar syrup and filled with chestnut-almond cream, chestnut pieces, and blackcurrant compote. Garnished with a Mont Blanc Cream and sweet chestnut paste, dried meringue sticks and a dusting of black currant powder.
