Title

A traditionally rustic pastry that starts with a flaky and crunchy pastry dough with a small amount of vanilla cream patt as well a combination of flambeed peach compote and fresh peach and nectarine sliced tossed in brown sugar. Each galette is hand shaped to have a creased border with an exposed centre that showcased the fruit filling. After filled, they are egg washed and sprinkled with raw sugar to provide a sweet & crunchy outer crust. Varied textures coming from the different fillings and base dough. After baked, they are glazed and then decorated with icing sugar around the rim.
